This breakfast dish is simple, healthy, and delicious. Paired with Habacado and Broja hot sauce, this recipe is sure to create a wonderful world of flavor in your mouth and is a great start to any day.
Ingredients

- 4 Eggs
- ½ pound of ground turkey
- 1 ½ tbs olive oil
- 2 tbs butter
- 1 ½ cups spinach or arugala
- 1 tsp Salt (Kosher if you have it)
- 1 tsp ground pepper
- ½ small scallion
- ½ cup grated Swiss cheese
Instructions
Step 1: Prep
First, brown the ground turkey, add a teaspoon of salt and a teaspoon of pepper. In a medium frying pan over medium high heat stir occasionally. Once fully cooked, remove ground beef from the stove and place in a bowl for use later.
Next, chop the scallion. Save the other half for another meal. Lightly whip two eggs in a small bowl with a fork.
Step 2: Make your Omelette
Place a medium frying pan (preferably non-stick) on the stove, and bring to medium high heat. Add 1 tbs of butter to the pan and allow the butter to melt. Spread the butter evenly over the pan with a spatula. Once the butter begins to bubble, add the whipped eggs to the pan. Slightly tilt the pan to allow the eggs to spread evenly over the pan. After about 30 seconds as the eggs begin to cook add ¾ cups spinach or arugala to half of the pan. Top with ¼ cup of ground turkey, ½ chopped onion, and ¼ cup grated Swiss cheese.
Once the egg appears mostly cooked (only slightly liquid), using a spatula gently fold half the omelette over the other half. It should look like a half circle, omellette, duh! (See picture). Allow to cook for about 15 seconds, and then flip the omelette over and cook for an additional 15-30 seconds. Remove from pan and plate. Repeat this process for the second omelette.
Step 3: Plate your Dish
After the omelettes have been cooked and plated, lightly drizzle with Broja and Habacado Hot Sauce. This plate can be garnished with cherry tomatoes and sliced avocados or is great just as is.
